  • 4 large eggs

  • 1 cup (240ml) buttermilk
  • Zest and juice of 2 lemons
  • 1 ½ cups (225g) fresh blueberries, tossed in 1 tablespoon flour

For the Lemon Cream Cheese Frosting:

  • 1 cup (230g) unsalted butter, softened
  • 8 oz (225g) cream cheese, softened
  • 4 cups (500g) powdered sugar
  • Zest and juice of 1 lemon
  • 1 teaspoon vanilla extract

Instructions

 

For the Cake:
  1. Preheat your oven to 350°F (175°C). Grease and flour three 8-inch round baking pans.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. In a large mixing bowl, beat the butter and sugar until light and fluffy.
  4. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
  5. Mix in the lemon zest and juice.
  6. Add the flour mixture to the butter mixture in three parts, alternating with the buttermilk, beginning and ending with the flour mixture. Mix until just combined.
  7. Gently fold in the blueberries.
  8. Divide the batter evenly among the prepared pans.
  9. Bake for 25 to 30 minutes, or until a toothpick inserted into the center of the cakes comes out clean.
  10. Allow the cakes to cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.

For the Frosting:

  1. In a large bowl, beat the butter and cream cheese together until smooth.
  2. Gradually add the powdered sugar, beating on low speed until combined.
  3. Stir in the lemon zest, juice, and vanilla extract. Increase the speed to medium-high and beat until the frosting is light and fluffy.

Assembly:

  1. Place one cake layer on a serving plate and spread a layer of frosting on top.
  2. Top with the second cake layer and spread another layer of frosting.
  3. Add the third cake layer and frost the top and sides of the cake.
