Strawberry Lime Black Pepper Popsicles

Most people wouldn’t think sweets when they think about black pepper, which is why we love this popsicle recipe! It really does a good job or being unique and making black pepper a real standout ingredient.

POPSICLE INGREDIENTS

  • 1 pound/carton of strawberries
  • 2/3 cup granulated sugar
  • 1/2 cup water
  • 2 limes; juiced
  • 1/4 – 1/2 teaspoon black pepper
  • Pinch of salt

RECIPE INSTRUCTIONS

Start by quartering one pound or one carton of fresh strawberries. Place the cut strawberries into a saucepan with 2/3 cup of granulated sugar. Give the ingredients a good mix and let sit for at least 10 minutes.

While that is sitting, go ahead and juice two limes. After you’re done juicing, measure out 1/4 to 1/2 teaspoon of black pepper, the fresher the better! Since we are huge fans of black pepper we used 1/2 a teaspoon, but if you just want a little hint go for the smaller amount. 

After the berries are done macerating, add your water and turn the stove temperature to medium-high until it comes to a rolling boil then reduce to simmer for 5 minutes. Stir often. You’ll know that it’s done when the mixture starts foaming a deep pink.

Cool the mixture down to room temperature by leaving it out or using an ice bath. Once the mixture is cool, add all of your ingredients to a blending container. Use an immersion blender, stand blender, or food processor to blend the ingredients. You could even leave the mixture whole if you want!

Pour the popsicle base into molds, let freeze, then enjoy!
